Cauliflower Fried Rice

Cauliflower Fried Rice

Ingredients:

  • ¾ cup bean sprouts
  • 2 cloves of diced garlic
  • ½ cup egg beaters
  • 1 large diced onion 
  • ½ small diced green pepper 
  • 1 large head of cauliflower riced (or just finely cut off the florets into rice)
  • 5 tablespoons soy sauce
  • 4 tablespoons sesame oil
  • ½ cup water
  • 3 diced scallions 

Optional: bacon, ham

Instructions:

  1. On high heat place water and cauliflower in a pan covered until tender. 
  2. In a separate frying pan, over medium-high heat, place 2 tablespoons of sesame oil, green pepper, garlic, and onions and sauté until tender.
  3. Add egg and scallions to vegetable mix and scramble together.
  4. Drain riced cauliflower and add to the vegetable mixture with remaining sesame oil and soy sauce. Fry until crispy on the outside and soft on the inside. Turn off heat and add bean sprouts and let sit for 5 minutes.
