Whoopie Pies

These are delicious and will freeze really well. You can also have them as cookies. If you are on the weight loss program, servings per day would be limited to 1 whoopie pie or 2 cookies. They average about 100 calories for either serving style, have about 9 grams of sugar and count as one carb serving in total.

Ingredients

  • 16 oz. whipped fat free cool whip divided
  • 1 chocolate flavored cake mix
  • 2 egg whites
  • Powdered suger in shaker top
  • 1 cup bell plantations peanut butter powder or chocolate peanut butter powder
  • Cooking spray
  • Wax paper

 

Directions

CAKES

  1. Preheat oven to 350 degrees.
  2. Beat 1/2 of cool whip tub amount until smooth then add egg whites. Stir cake mix into chool whip mixture thoroughly adding a little bit at a time.
  3. Place rounded tablespoons onto well sprayed cookie sheet and start checking for clean toothpick when inserted after about 10-12minutes. When toothpick is clean, remove cakes from oven,
  4. Cool for 2-3 minutes and then transfer for complete cooling to wax paper.
  5. After completely cooling, add filling mixture (see below).
  6. Sprinkle with powdered sugar.

 

FILLING OPTIONS

  1. Take remaining 1/2 of 16oz tub cool whip and add 1 cup of bell plantations peanut butter powder or chocolate peanut butter powder. You can do the cool whip by itself also but it will be more soupy.
  2. 2 jars of Walden Farms Mallow Dip with 1 cup Bell Plantation peanut butter powder or chocolate peanut butter powder.
  3. 2 jars of Walden Farms Mallow Dip with 1/2 jar Walden farms whipped peanut butter spread.
